5 Easy Late Summer Dinner Ideas for This Week

We’re hanging onto summer a little longer with this week’s meal plan. If you’re looking for late summer dinner ideas, we’ve got five easy ones we’re excited to make this week.
There are BLTs piled with garden tomatoes, teriyaki salmon bowls, an easy sheet pan dinner, a fresh steak salad, and hamburgers with air-fried fries.
As always, the goal isn’t anything fancy. It’s just five dinners we’re excited to eat and one less decision to make when 5:00 rolls around.
Here’s what we’re making this week.
Monday: BLTs with Herb Mayo

If you’ve got garden tomatoes sitting on your counter right now, this is your sign to make BLTs.
We’ll be keeping them classic with crispy bacon, lettuce, thick slices of fresh tomato, and toasted bread, but adding our homemade herb mayo. It takes just a couple of minutes to mix together and has dill, parsley, lemon, garlic, paprika, and black pepper.
It’s such a simple upgrade, but it makes a really good garden tomato BLT even better.

Tuesday: Teriyaki Salmon Bowls

Wednesday: Sheet Pan Chicken Fajitas

By Wednesday, we’re ready for something that requires very little thought.
Our Sheet Pan Chicken Fajitas are made with chicken, bell peppers, onions, and a simple homemade spice blend. Everything cooks together on one pan, which means prep is easy and cleanup is even better.
Then we’ll put out tortillas and all the toppings and let everyone build their own. Sour cream, salsa, avocado, cheese, and fresh lime are always good options.

Thursday: Steak Salad

A big steak salad is one of those meals that feels fresh and summery but still fills you up.
This week we’re making the Steak Salad from Natasha’s Kitchen. Steak gets paired with crisp greens and plenty of fresh ingredients, then finished with a homemade honey-lime dressing.
For kids who aren’t sold on salad for dinner, this is also an easy meal to deconstruct. Serve the steak and whatever sides they’ll eat separately and call it good.

Friday: Hamburgers + Air-Fried French Fries

We’re ending the week with about the easiest Friday night dinner possible: hamburgers and fries.
We’ll throw burgers on the grill and make Kirkland Signature frozen french fries from Costco in the air fryer. Add some watermelon, corn on the cob, sliced garden veggies, or whatever else needs to be eaten from the fridge.
Nothing complicated. Just a really good Friday night dinner that everyone will eat.
