Sheet Pan Chicken Fajitas – Fast, Easy, And Packed With Flavor

Ingredients:
- 1.5 lbs chicken thighs (boneless, skinless, fat trimmed, and sliced)
- 1 large onion sliced (yellow or red)
- 2 bell peppers sliced (yellow, red, or orange work great)
- 3 tablespoons olive oil
- 2 teaspoons sea salt
- ½ teaspoon coarse ground pepper
- 1 ½ teaspoons cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 ½ teaspoons chili powder
- ¼ cup chopped cilantro
- 1 lime (for squeezing)
- Optional for serving: tortillas, sour cream, salsa, avocado, cheese


Instructions:
- Preheat & Prep:
Preheat your oven to 425°F and line a large sheet pan with cooking spray or foil for easy cleanup. - Prepare the Chicken & Veggies:
In a large mixing bowl (or gallon-sized Ziploc bag for easy cleanup), toss the chicken, onion, and bell peppers with the olive oil. - Season:
In a small bowl, mix together the salt, pepper, cumin, oregano, garlic powder, smoked paprika, and chili powder. Sprinkle the seasoning mix over the chicken and veggies, tossing to coat evenly. - Bake:
Spread the chicken and veggie mixture evenly on the prepared sheet pan. Bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F. - Finish & Serve:
Remove the pan from the oven. Sprinkle with chopped cilantro and drizzle with fresh lime juice. Serve with tortillas and your favorite toppings, such as sour cream, salsa, avocado, and cheese.
