Copycat Cafe Rio Sweet Pork

Ingredients
  

For the Pork
  • 2-4 lbs pork roast or loin
  • 2 1/4 cups regular Coke
  • 1/4 cup brown sugar
  • Dash of garlic salt
  • 1/4 cup water
For the Sauce
  • 3/4 cup Coke
  • 1 4 oz can diced green chilies
  • 1 cup red enchilada sauce
  • 1 cup brown sugar

Method
 

  1. Add the pork, 2 1/4 cups Coke, water, brown sugar, and a dash of garlic salt to your crock pot.
  2. Cook on low for 6-8 hours, until the pork is fully cooked and fork-tender.
  3. Drain the excess liquid, then shred the pork with two forks.
  4. Blend together the sauce ingredients: Coke, green chilies, enchilada sauce, and brown sugar.
  5. Pour the sauce over the shredded pork and stir to coat.
  6. Let it sit on low until ready to serve.
