Dinner in a Pumpkin

Our mom's original Halloween dinner: ground beef, rice, and veggies in cream soup, baked right inside a pumpkin.
Prep Time 30 minutes
Cook Time 1 hour 45 minutes
Total Time 2 hours 15 minutes
Servings: 6 servings

Ingredients

  • 1 pumpkin with a stem "handle"
  • 1/2 lb ground beef or cut-up chicken
  • 2 cups cooked rice
  • 1 cup mushrooms
  • 1 cup carrots
  • 1 1/2 cups broccoli
  • 1 1/2 cups green beans
  • 1 cup onions
  • 1 1/2 cups corn
  • 1 can cream of mushroom or cream of chicken soup

Method

  1. Hollow out a pumpkin that has a stem "handle," cutting a lid around the stem.
  2. Cook the ground beef (or chicken) and the rice.
  3. Mix the meat, rice, and vegetables together, then add the cream of mushroom or cream of chicken soup.
  4. Spoon the filling into the pumpkin and place the lid on top.
  5. Bake at 375°F until the vegetables are cooked, about 1 1/2 to 2 hours.
