Ingredients
  

  • 1 pound bowtie or rotini pasta
  • 2 cups fresh arugula
  • 1 cup grape tomatoes halved
  • 1 red bell pepper diced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1 cucumber quartered
  • 1 cup feta cheese crumbled
  • 1 cup Greek salad dressing

Method
 

  1. Cook the pasta according to the package directions. Drain and let cool slightly.
  2. While the pasta cools, chop the veggies — dice the bell pepper, quarter the cucumber, and halve the tomatoes.
  3. Combine everything in a large bowl: pasta, arugula, tomatoes, red pepper, cucumber, olives, and feta.
  4. Drizzle with the Greek dressing and toss well to coat.
  5. Enjoy immediately, or refrigerate for a chilled, flavorful salad later. If meal prepping, leave the arugula out and add it just before eating.
