Method
- Cook the pasta according to the package directions. Drain and let cool slightly.
- While the pasta cools, chop the veggies — dice the bell pepper, quarter the cucumber, and halve the tomatoes.
- Combine everything in a large bowl: pasta, arugula, tomatoes, red pepper, cucumber, olives, and feta.
- Drizzle with the Greek dressing and toss well to coat.
- Enjoy immediately, or refrigerate for a chilled, flavorful salad later. If meal prepping, leave the arugula out and add it just before eating.
