Honey Garlic Salmon

Sticky, sweet, garlicky salmon on the table in about fifteen minutes - a weeknight dinner that feels special without the work.

Ingredients
  

  • 12 oz salmon fillets cut into 2 to 3 pieces
  • Salt and black pepper
  • 1 pinch cayenne pepper
  • 2 tablespoons honey
  • 1 tablespoon warm water
  • 1 1/2 teaspoons apple cider vinegar lemon juice works too
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1/2 lemon sliced into wedges
  • fresh parsley chopped, for the top

Method
 

  1. Pat the salmon dry and season on both sides with salt, pepper, and a pinch of cayenne. Set aside while you mix the sauce.
  2. In a small bowl, stir together the honey, warm water, apple cider vinegar, and a tiny pinch of salt until smooth.
  3. Heat an oven-safe skillet (cast iron is perfect) over high heat and add the olive oil. Lay the salmon in skin side down and cook about a minute. Flip it, cook another minute, then flip it back so the skin is down again.
  4. Add the minced garlic to the pan and let it cook until just golden and fragrant.
  5. Pour in the honey mixture, tuck in the lemon wedges, and let the sauce bubble down until sticky and glossy, spooning it over the salmon as it goes.
  6. For extra char, slide the skillet under the broiler for about a minute. Totally optional.
  7. Sprinkle with parsley and serve right away, with plenty of glaze spooned over the top.
