Easy Chicken Lettuce Wraps with Teriyaki Sauce

One of my absolute favorite go-to meals is a recipe I got from my mother-in-law, Lori. The chicken comes together so fast, and every time I make it, I find myself commenting on how fresh the meal feels.

My kids love it, it’s easy to throw together, and I feel good after eating it. That’s pretty much everything I’m looking for in a weeknight dinner.

These easy chicken lettuce wraps are packed with flavor, loaded with fresh vegetables, and completely customizable depending on what your family likes. Everyone can build their own wrap, which always makes dinner a little more fun.

Lori’s Lettuce Wraps

Ingredients

1 lb chicken (cubed)
1 can water chestnuts (optional)

For the Sauce:

½ cup Yoshida sauce (best results with the Yoshida brand!)
½ cup mayonnaise
2 tsp ground ginger
⅛ to ¼ tsp ground red pepper
1 tsp Sriracha (optional)

Directions

Combine all sauce ingredients in a saucepan and cook over medium heat until warmed through.

Meanwhile, cook cubed chicken until fully cooked. Add water chestnuts and enough of the finished sauce to coat the chicken mixture.

Serve the chicken in lettuce leaves and let everyone add their favorite toppings.

Suggested Toppings & Sides

Rice
Cucumbers
Sliced celery
Sliced almonds
Matchstick carrots
Snap peas, cut into bite-sized pieces
Sliced green onions

One of my favorite things about this meal is all the crunch from the fresh vegetables and toppings. The combination of warm chicken, cool veggies, and flavorful sauce makes every bite so good.

Optional Peanut Sauce

I don’t usually make the peanut sauce below because the wraps are delicious on their own, but if you’re looking to take them up a notch, it’s a great addition.

Ingredients

¼ cup creamy peanut butter
4 tbsp sugar
1 tsp rice vinegar
½ tsp chili oil
2 tbsp water
1 tbsp soy sauce
1 tsp lime juice

Directions

Combine the peanut butter, water, sugar, soy sauce, rice vinegar, lime juice, and chili oil in a small saucepan.

Stir over medium heat until the mixture begins to bubble. Cover the pan and remove from the heat.

Drizzle over the wraps or serve on the side for dipping.
