Weekly Meal Plan: Easy Fall Dinners & a Fun Halloween Favorite
Another week, another five dinners to take the guesswork out of meal planning!
This week’s lineup has a little bit of everything. We’re starting with fresh chicken lettuce wraps and flavorful chicken tacos, then bringing in some cozy comfort food with tortilla soup and beef stroganoff. And since Halloween is getting closer, we’re adding a fun little twist to one of our family favorites: ghost chicken pot pie!
Nothing too complicated, just five good dinner ideas to make the week a little easier.
Here’s what we’re making!
1. Easy Chicken Lettuce Wraps with Teriyaki Sauce

We’re starting the week with one of our own recipes! These chicken lettuce wraps are a longtime favorite, with chicken tossed in a sweet and savory sauce and served with rice, crisp lettuce, and plenty of fresh toppings.
We love setting everything out and letting everyone build their own wraps. It’s quick, fresh, and one of those meals that always feels good after eating.
A little tip: Prep your rice and chop the vegetables ahead of time. Dinner comes together so quickly when everything is ready to go.
2. Chicken Tacos with Green Sauce from Pinch of Yum

These chicken tacos from Pinch of Yum are such a good addition to the weeknight rotation! The chicken is seasoned with taco spices, garlic, and a little soy sauce, then cooked until golden and juicy.
But the real star might be that creamy avocado green sauce. We’re always excited about a dinner with a really good sauce, and this one is especially delicious with fresh lime, cilantro, and warm tortillas.
A little tip: The chicken cooks quickly in the air fryer, making this a great option for a busy evening.
3. Easy Pressure Cooker Tortilla Soup from Our Best Bites

We’re definitely in soup season now, and this easy tortilla soup from Our Best Bites is perfect for a chilly fall evening.
It uses roasted red pepper and tomato soup as a shortcut, along with chicken, beans, corn, and spices. Everything comes together in the pressure cooker with very little prep, which is exactly what we need some nights.
And of course, half the fun of tortilla soup is the toppings!
A little tip: Set out tortilla chips, shredded cheese, avocado, and sour cream so everyone can customize their own bowl.
4. Ultimate Beef Stroganoff from Mel’s Kitchen Cafe

This beef stroganoff from Mel’s Kitchen Cafe is making another appearance on our meal plan because sometimes a good comfort-food dinner deserves a repeat!
Tender beef in a rich, creamy sauce served over egg noodles is exactly the kind of meal we crave when the weather starts cooling down. And since the slow cooker does most of the work, it’s a great option for a busy day.
A little tip: Get the beef started earlier in the day, then cook your noodles and throw together a simple vegetable or salad right before dinner.
5. Ghost Chicken Pot Pie

We’re ending the week with a little Halloween fun!
Our ghost chicken pot pie is everything we love about classic chicken pot pie: tender chicken, vegetables, and a creamy filling tucked into a flaky crust. But instead of a traditional top crust, we use a ghost-shaped cookie cutter to make little pastry ghosts that float right on top.
It’s such a simple way to make an ordinary dinner feel festive, and the kids love helping cut out the ghosts!
A little tip: Refrigerated pie crust keeps this one easy, and cutting out the ghosts is a perfect job for little helpers.
