Weekly Meal Plan: Cozy Soups, Chicken Tikka Masala & More
It’s a two-soup kind of week around here, and we’re not complaining.
With Halloween festivities on the calendar and cooler evenings settling in, we’re leaning into some cozy favorites this week. We’re making a big batch of our Instant Pot Chicken Noodle Soup for a family Halloween party, and tomato soup with grilled cheese is making an appearance, too.
But we’re balancing out all that comfort food with a few fresh, flavorful dinners: a copycat Chick-fil-A Cobb Salad with homemade Avocado Lime Ranch, creamy chicken tikka masala, and a Thai peanut noodle salad.
Here’s what’s on the menu this week!

1. Copycat Chick-fil-A Cobb Salad with Avocado Lime Ranch

We’re starting the week with one of our favorite restaurant salads, made right at home. Crispy chicken nuggets, romaine lettuce, bacon, hard-boiled eggs, cheese, corn, and tomatoes, all topped with homemade Avocado Lime Ranch.
The dressing is what really makes this one. It’s creamy, tangy, and packed with flavor. And using frozen chicken nuggets makes the whole dinner surprisingly simple.
A little tip: Prep the eggs and bacon ahead of time, and dinner comes together in no time. FULL RECIPE HERE!
2. Easy Chicken Tikka Masala from Two Peas and Their Pod

We’re always up for a dinner with a really good sauce, and this chicken tikka masala from Two Peas & Their Pod looks like just the thing.
Tender chicken simmered in a creamy, warmly spiced tomato sauce, served over rice with naan on the side. It’s cozy, flavorful, and a fun way to mix up the usual weeknight dinner rotation.
A little tip: Don’t forget the naan. You’ll want something to scoop up every last bit of that sauce. FULL RECIPE HERE!
3. Instant Pot Chicken Noodle Soup

This week we’re making our tried-and-true chicken noodle soup for a Halloween family party!
This recipe has been a favorite in our family for years. It’s full of tender chicken, hearty noodles, vegetables, and a rich, savory broth that makes it especially comforting on a chilly evening.
We’ve even made it for a family wedding before, so it’s definitely one we trust when we’re feeding a crowd.
A little tip: If you’re making this for a gathering, cook the noodles separately and add them closer to serving time so they don’t soak up too much broth. FULL RECIPE HERE!
4. Easy Pressure Cooker Tomato Soup from Our Best Bites with Grilled Cheese

Yes, another soup. We told you it was that kind of week.
There’s something about tomato soup and grilled cheese that never gets old, especially when the weather starts cooling down.
We’re trying this easy pressure cooker version from Our Best Bites, made with tomatoes, carrots, onion, basil, and a little cream. Add buttery grilled cheese sandwiches for dipping, and you’ve got one of the coziest dinners around.
A little tip: Cut the grilled cheese into strips or little squares for dipping. It’s a small thing, but it makes dinner a little more fun. FULL RECIPE HERE!
5. Thai Peanut Noodle Salad from Our Best Bites

We’re finishing out the week with something fresh, crunchy, and full of flavor.
This Thai Peanut Noodle Salad from Our Best Bites combines noodles, colorful vegetables, greens, and chicken with a peanut dressing that ties everything together.
We love a meal that has plenty of fresh ingredients but still feels satisfying enough for dinner, and this one looks like a great way to balance out our soup-heavy week.
A little tip: This is a good one for using up extra vegetables in the fridge. Add whatever crunchy veggies you have on hand. FULL RECIPE HERE!
A Little Meal Prep for the Week
Nothing too complicated, but a few things that could make dinners easier:
Hard-boil the eggs and cook the bacon for the Cobb salad.
Wash and chop lettuce for both salads.
Check the pantry for the spices needed for chicken tikka masala.
Chop carrots, onions, and celery ahead of the Halloween party.
Make sure there’s plenty of bread and cheese for grilled cheese night.
What’s on Your Menu This Week?
We’re looking forward to a week of good sauces, cozy soups, and a little Halloween family fun. It’s a nice mix of meals that feel comforting without making every dinner a big production.
If you’re in a dinner rut, we hope one or two of these recipes make their way onto your menu this week.
And if you have a favorite soup recipe, send it our way. Apparently, we’re in the mood for soup!
