Weekly Family Meal Plan: 5 Easy Dinner Ideas for a Cozy Week

Another week, another meal plan! With November here and the days getting a little colder, we’re leaning into cozy, comforting dinners that don’t require spending all evening in the kitchen.

This week’s menu has a little bit of everything: creamy white chicken chili, a loaded Cobb salad with Greek chicken, juicy pork tenderloin, an easy Instant Pot pasta, and a classic Sunday-style pot roast.

We love having a mix of meals throughout the week, especially ones that make good leftovers or can be prepped ahead of time.

Here are five easy family dinner ideas to take one more thing off your plate this week!

This Week’s Dinner Menu

1. Creamy White Chicken Chili

Our favorite creamy white chicken chili

We’re starting the week with one of our favorite cold-weather dinners! This creamy white chicken chili is packed with shredded chicken, white beans, green chiles, and corn, with just enough spice to make it extra flavorful.

We love loading ours up with shredded cheese, avocado, tortilla strips, cilantro, and a squeeze of fresh lime.

The best part? You can make it on the stovetop, in the Instant Pot, or in the slow cooker, depending on how your day is going.

Our tip: Use rotisserie chicken or leftover shredded chicken for a quicker stovetop version. And don’t skip the toppings!

2. Cobb Salad with Greek Chicken

We love a good dinner salad, especially one that’s hearty enough to be a full meal.

This week we’re using the Cobb salad recipe from Two Peas & Their Pod, but swapping the traditional chicken for our own Greek-marinated chicken.

Think crisp lettuce, bacon, hard-boiled eggs, avocado, tomatoes, cheese, and flavorful Greek chicken, all tossed with a delicious dressing.

It’s fresh, filling, and a nice change of pace between some of our cozier dinners.

Our tip: Marinate the chicken ahead of time and prep the eggs and bacon earlier in the day. Then all you have to do is cook the chicken and assemble everything when dinner rolls around.

3. Air Fryer Pork Tenderloin with Roasted Vegetables

Air Fryer Pork Tenderloin – Mel’s Kitchen Cafe

This air fryer pork tenderloin from Mel’s Kitchen Cafe looks like the perfect easy weeknight dinner.

The pork gets coated in a simple seasoning rub with brown sugar, smoked paprika, garlic, and a few pantry staples, then cooks in the air fryer until juicy and tender.

We’re pairing it with a big pan of roasted vegetables. Broccoli, carrots, Brussels sprouts, sweet potatoes, or whatever needs to be used up in the fridge would all be delicious.

It’s one of those dinners that feels a little special without requiring a lot of effort.

Our tip: Get your vegetables roasting while the pork cooks in the air fryer, and let the meat rest before slicing so it stays nice and juicy.

4. Instant Pot Creamy Baked Ziti

Instant Pot Creamy Baked Ziti – Mel’s Kitchen Cafe

Pasta night is always a good idea, especially when the Instant Pot does most of the work!

This creamy baked ziti from Mel’s Kitchen Cafe is made with pasta, tomatoes, cream, Parmesan, and simple Italian seasonings.

Everything cooks together in the Instant Pot for an easy, comforting dinner without having to boil the pasta separately.

We’ll probably serve ours with some garlic bread or a simple green vegetable on the side.

Our tip: You can add cooked Italian sausage or ground beef if you want a heartier meal, but it also makes a delicious meatless dinner just as it is.

5. Mississippi Pot Roast with Carrots, Potatoes, and Onions

Mississippi Pot Roast – Belle of the Kitchen

We’re finishing the week with a good old-fashioned slow cooker dinner.

This Mississippi pot roast from Belle of the Kitchen uses a chuck roast, ranch seasoning, au jus mix, butter, and pepperoncini peppers to create incredibly tender, flavorful beef.

We’re making it a full meal by adding carrots, potatoes, and onions to the slow cooker, then serving everything with a simple side salad.

It’s the perfect dinner for a busy day when you want something warm and homemade waiting for you.

Our tip: Follow the original recipe for the roast, then add the vegetables during the last couple of hours of cooking, allowing enough time for the potatoes and carrots to become tender. Cut them into larger pieces so they hold their shape.

And if you have leftovers, the shredded beef would be delicious in sandwiches the next day!

A Few Ways to Make This Week Easier

A little preparation can make these five dinners even more manageable.

  • Prep your chicken: If you’re using raw chicken for both the chili and the Cobb salad, plan ahead so you can marinate the Greek chicken and prepare any precooked chicken needed for the chili.
  • Wash and chop vegetables: Get your salad greens and roasting vegetables ready ahead of time.
  • Hard-boil your eggs: Make the eggs for the Cobb salad a day or two in advance.
  • Check your pantry: Several recipes use ingredients you may already have, including broth, pasta, canned beans, and seasonings.
  • Plan for leftovers: White chicken chili and Mississippi pot roast are especially good options for lunches the following day.

Making Dinner a Little Easier

We know that figuring out what to make for dinner every single night can feel like a never-ending task.

That’s why we love sharing these weekly meal plans. Nothing fancy or complicated, just five good dinners to help make the week run a little more smoothly.

And remember, a meal plan is meant to make life easier, not give you one more thing to keep up with. Swap the days around, use what you already have, or save a recipe for another week.

Here’s to good food, full tables, and one less thing to think about this week.
