Copycat Cafe Rio Pork: Sweet, Saucy, and Crock Pot Easy

Ingredients:
For the Pork:
- 2–4 lbs pork roast or loin
- 2 ¼ cups regular Coke
- ¼ cup brown sugar
- Dash of garlic salt
- ¼ cup water
For the Sauce:
- ¾ cup Coke
- 1 (4 oz) can diced green chilies
- 1 cup red enchilada sauce
- 1 cup brown sugar
Instructions:
- Add pork, 2 ¼ cups Coke, water, brown sugar, and a dash of garlic salt to your crock pot.
- Cook on low for 6–8 hours, until the pork is fully cooked and fork-tender.
- Drain excess liquid, then shred the pork with two forks.
- Blend together the sauce ingredients: Coke, green chilies, enchilada sauce, and brown sugar.
- Pour the sauce over the shredded pork and stir to coat.
- Let it sit on low until ready to serve.
Serving Ideas:
- Stuff it in tortillas with cheese and guac for tacos.
