Ingredients
  

The Salad
  • Spinach or spring salad mix
  • 1 apple thinly sliced
  • Crumbled feta cheese
  • Walnuts toasted
The Dressing
  • 1/4 cup apple cider vinegar
  • 1 teaspoon maple syrup or honey
  • 1 garlic clove grated
  • 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper
  • 1/4 cup extra-virgin olive oil

Method
 

  1. Whisk together all the dressing ingredients except the olive oil, then slowly drizzle in the oil while whisking continuously to create a smooth, well-blended dressing.
  2. In a large bowl, toss the spinach or spring mix with the sliced apples, feta, and walnuts. Drizzle with the apple cider vinaigrette and gently toss to coat.
