Ingredients
  

Green Goddess Dressing
  • 1 cup whole milk Greek yogurt
  • 1 cup fresh parsley
  • 1 cup mixed soft leafy herbs dill, mint, basil
  • 2 tablespoons chopped chives
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 2 teaspoons capers
  • 1 garlic clove
  • 1/4 teaspoon sea salt
  • Fresh cracked black pepper
For the Salad
  • Spring mix or baby butter lettuce
  • Cooked rice
  • Grilled chicken
  • Shelled edamame
  • Sugar snap peas
  • Sliced cucumber
  • Freshly grated Parmesan cheese
  • Avocado
  • Green Goddess dressing from above

Method
 

Green Goddess Dressing
  1. Add all the dressing ingredients to a blender or food processor and blend until smooth and creamy. Taste and adjust the salt, pepper, or lemon juice as needed. Store in the fridge for up to 5 days.
Assemble the Salad
  1. Layer the spring mix, cooked rice, grilled chicken, edamame, sugar snap peas, cucumber, and Parmesan into a bowl. Top with avocado, drizzle generously with the green goddess dressing, and serve.
