I tried the Zupas Green Goddess Bowl (they call it a bowl on the menu, but it is really a big, loaded salad) the other day and absolutely loved it! It felt fresh, filling, and somehow still light all at the same time. Now it’s one of those meals I crave when I want something packed with greens and protein but still actually satisfying. After making it at home a few times, I think this version gets pretty darn close. I love that I can load it up with extra toppings and use ingredients I already have at home.

Ingredients
  

Green Goddess Dressing
  • 1 cup whole milk Greek yogurt
  • 1 cup fresh parsley
  • 1 cup mixed soft leafy herbs dill, mint, basil
  • 2 tablespoons chopped chives
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 2 teaspoons capers
  • 1 garlic clove
  • 1/4 teaspoon sea salt
  • Fresh cracked black pepper
For the Salad
  • Spring mix or baby butter lettuce
  • Cooked rice
  • Grilled chicken
  • Shelled edamame
  • Sugar snap peas
  • Sliced cucumber
  • Freshly grated Parmesan cheese
  • Avocado

Method
 

Green Goddess Dressing
  1. Add all the dressing ingredients to a blender or food processor and blend until smooth and creamy. Taste and adjust the salt, pepper, or lemon juice as needed. Store in the fridge for up to 5 days.
Assemble the Salad
  1. Layer the spring mix, cooked rice, grilled chicken, edamame, sugar snap peas, cucumber, and Parmesan into a bowl. Top with avocado, drizzle generously with the green goddess dressing, and serve.

Zupas Green Goddess Dressing Ingredients

The dressing is what makes this bowl taste like the real thing, so here is exactly what goes in it. It is Greek yogurt based, so it is thick and creamy without any mayo: whole milk Greek yogurt, fresh parsley, a cup of soft herbs (dill, mint, and basil), chopped chives, fresh lemon juice and zest, olive oil, capers, a garlic clove, sea salt, and cracked black pepper. What Goes in the Zupas Green Goddess Bowl

Zupas builds theirs on a bed of greens with rice, grilled chicken, edamame, sugar snap peas, cucumber, avocado, and Parmesan, then drizzles the dressing over the top. That combination is what makes it filling enough for dinner. I keep the rice and chicken in when I want a full meal and skip them when I want a lighter lunch salad.

A Few Notes

  • Zupas uses baby butter lettuce, but I usually just grab spring mix because it’s easy and I almost always have it on hand.
  • This is such a good meal prep lunch because the dressing keeps well in the fridge and everything can be prepped ahead of time.
  • I love adding warm rice because it makes the salad feel more filling and balanced.
  • Freshly grated Parmesan makes a huge difference here.
