Ingredients

Cookies
  • 1 box lemon cake mix
  • 2 eggs
  • ⅓ cup vegetable oil
  • Powdered sugar for coating
Optional Glaze
  • 1½ tablespoons water
  • ¾–1 cup powdered sugar

Method

Cookies
  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the lemon cake mix, eggs, and vegetable oil. Mix until a soft dough forms.
  3. Line a baking sheet with parchment paper or lightly grease it.
  4. Roll the dough into 1-inch balls. Dip the top of each in powdered sugar, place on the baking sheet, and gently flatten slightly.
  5. Bake for 5–6 minutes. Do not let the cookies turn golden brown.
  6. Let cool completely before adding the optional glaze.
Optional Glaze
  1. In a small microwave-safe bowl, heat the water for 30 seconds.
  2. Gradually whisk in the powdered sugar until a thick, smooth glaze forms.
  3. Drizzle over the cooled cookies and let set before serving.

Notes

Bake 5 minutes for a softer cookie, or an extra minute if you like them firmer. Cookies must be fully cool before glazing or the glaze will run off.
