Easy Herb Mayo for Sandwiches, Burgers & More
There are some recipes that barely qualify as a recipe but make everything you put them on so much better. This easy herb mayo is one of them.
We originally started making it for BLTs during garden tomato season, and it takes an already very good sandwich to another level. But once you’ve made a batch, you’ll quickly find plenty of other reasons to keep it in the fridge.
It’s creamy and herby with a little fresh lemon, garlic, paprika, and black pepper. Best of all, it takes about two minutes to stir together with ingredients you probably already have.

Easy Herb Mayo
Ingredients
1 cup mayonnaise
¼ teaspoon garlic powder
½ teaspoon kosher salt
1 teaspoon dried parsley or 1 tablespoon fresh parsley, finely chopped
1 teaspoon dried dill or 1 tablespoon fresh dill, finely chopped
1½ teaspoons fresh lemon juice
½ teaspoon paprika
½ teaspoon black pepper
Instructions
Add the mayonnaise, garlic powder, kosher salt, parsley, dill, fresh lemon juice, paprika, and black pepper to a small bowl.
Stir until everything is well combined.
You can use the herb mayo right away, but if you have time, cover it and let it sit in the refrigerator for 30 minutes or so. This gives the herbs and seasonings a little time to come together.
Give it another stir before serving and you’re done!
Fresh Herbs vs. Dried Herbs
Either works!
We love using fresh parsley and dill when we have them around, especially during the summer. However, dried herbs make this recipe incredibly easy to throw together any time.
As a general rule, you’ll use 1 teaspoon dried herbs for every 1 tablespoon fresh herbs in this recipe.
So use whatever you have. There’s no need to make a grocery store run just for fresh dill.
Our Favorite Way to Use It: Garden Tomato BLTs
This is where this herb mayo really shines.
Toast some good bread, spread a generous amount of herb mayo on each slice, and pile it with crispy bacon, lettuce, and thick slices of a ripe garden tomato.
It’s such a simple summer dinner, but when tomatoes are at their peak, it’s hard to beat.
And don’t forget to sprinkle a tiny bit of salt directly onto your tomato slices. It makes them even better.

Turkey or chicken sandwiches
Burgers
Chicken burgers

You can also spread it onto sandwiches you’re packing for lunch instead of regular mayonnaise for an easy little upgrade.
How Long Does Herb Mayo Last?
Store your herb mayo in an airtight container in the refrigerator.
If you’ve made it with dried herbs, I’d use it within about a week. If you’re using fresh herbs, plan to use it within 3–4 days for the best flavor and freshness.
