Easy Cowboy Caviar Recipe (Cowboy Caviar Dip)

Cowboy caviar is one of those recipes that disappears the second you set it on the table. We brought a big bowl to a family get-together expecting leftovers and we walked home with an empty bowl and a handful of people asking us for the recipe.

If you have never made it, cowboy caviar is a fresh, colorful bean and veggie salad that doubles as a dip. It comes together in one bowl with no cooking required, and it is the kind of thing you can throw together while the kids run circles around the kitchen. Scoop it up with tortilla chips, pile it on tacos, or eat it straight from the fridge with a spoon (we will not tell).

Total Time 15 minutes
Servings: 8 servings

Ingredients

  • 1 can (15 oz) sweet golden corn drained
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) black-eyed peas drained and rinsed
  • 1 red bell pepper diced
  • 3 Roma tomatoes diced
  • 1 jalapeño seeded and finely diced
  • 2 avocados diced
  • 1 small bunch fresh cilantro chopped
  • 2 limes juiced
  • 1 packet zesty Italian dressing mix or about ⅓ cup zesty Italian dressing

Method

  1. Drain and rinse the corn, black beans, and black-eyed peas, then add them all to one big bowl.
  2. Dice the red bell pepper, Roma tomatoes, and jalapeño and toss them in. Leave the jalapeño seeds out for a milder bite.
  3. Chop the cilantro and add it in.
  4. Fold in the diced avocado so it stays in pretty chunks instead of turning to mush.
  5. Sprinkle the zesty Italian dressing mix over the top and squeeze the limes over everything.
  6. Gently mix it all together and add salt and pepper to taste.
  7. Cover and chill for at least 30 minutes so the flavors can meld, then serve with tortilla chips.

Why We Love This Recipe

This is our go-to for potlucks, barbecues, and lazy summer nights when no one wants to turn on the oven. It is budget-friendly, mostly pantry staples, and naturally packed with fiber and protein from all those beans. Best of all, it is a recipe the kids can help with. Little hands love dumping in the cans and giving everything a big stir, and there is something sweet about making something together that the whole family actually fights over.

Tips for the Best Cowboy Caviar

  • Make it ahead. The flavor is even better after a few hours in the fridge.
  • Control the heat by leaving the jalapeño seeds in for more kick or out for a mild version.
  • Drain the beans and corn well so the salad does not turn watery.
  • A squeeze of extra lime or a pinch of salt at the end wakes the whole thing up.
  • Leftovers keep for two to three days, though they rarely last that long.

Whether you are feeding a crowd or just want something fresh in the fridge, cowboy caviar always delivers. Give it a try and let us know in the comments how you like to serve yours, with chips, on tacos, or straight from the spoon!

Cowboy caviar is one of our go-to summer BBQ side dishes all season long.
