Easy Weekly Meal Plan: 5 Family Dinner Ideas

We’re back with another week of dinners! Having even a loose plan for the week makes such a difference around here. It means fewer last-minute grocery runs, less staring into the fridge at 5:00, and hopefully a little less takeout.

This week’s easy weekly meal plan has a little bit of everything: a tried-and-true favorite, pizza night, two recipes we’re excited about, and a cozy pasta dinner to finish out the week.

Here’s what we’re making!

Monday: Easy Greek Chicken

We’re starting with one of our go-to chicken recipes. The marinade is made with lemon, garlic, oregano, olive oil, and a few simple seasonings, and the chicken only needs about 30 minutes to marinate. We love it with rice, cucumbers, tomatoes, tzatziki, and warm pita.

Tuesday: Homemade Pizza Night

We’re keeping Tuesday EASY with homemade pizza using Trader Joe’s pizza dough. Everyone can choose their own toppings, and it’s one of those dinners that feels a little more fun without requiring us to make pizza dough from scratch.

Add a simple salad, fruit, or veggies on the side and dinner is done. Our favorite pizza steel to cook on is this one! Makes all the difference and gets the crust nice and crispy.

Wednesday: One-Pot Lemony Chicken Thighs and Rice

This one-pot dinner from Jenn Eats Good combines seasoned chicken thighs with jasmine rice, kale (or spinach), lemon, coconut milk, and fresh herbs. Everything comes together in one pan, which means a flavorful dinner and, more importantly, fewer dishes afterward.

Thursday: Sweet & Spicy Pork (or steak) Bowls

These bowls are exactly the kind of weeknight dinner we love. Ground pork (we like to substitute this for thinly sliced steak), cabbage, peppers, and green onions are tossed in a sweet and savory sauce with a little optional heat, then served over rice with lime and cilantro. The whole thing comes together in about 30 minutes.

Friday: Instant Pot Creamy Baked Ziti

We’re ending the week with comfort food. Mel’s Kitchen Cafe’s Instant Pot Creamy Baked Ziti gives you all the cozy, cheesy goodness of baked pasta without having to assemble and bake a traditional ziti.

This feels like the perfect Friday night dinner with some garlic bread and a simple green salad.
