Greek Pasta Salad: A Simple and Delicious Favorite!
I’ve always been a fan of salads, veggies and mediterranean cuisine. Give me all the olives and feta cheese! This Greek pasta salad is a staple around my house and I make it on a regular basis. It’s loaded with crisp veggies, tangy feta, and hearty pasta, all tossed in a zesty Greek dressing. Whether you’re prepping lunch, planning a light dinner, or bringing a side dish to a gathering, this recipe is a winner.

What You’ll Need:
- Pasta – Bowtie or Rotini are my favorites, but any pasta will do.
- Fresh arugula – Adds a peppery bite.
- Grape tomatoes – Halved for a burst of sweetness.
- Red bell pepper – Diced for crunch and color.
- Kalamata olives – Pitted and sliced for a salty kick.
- Cucumber – Quartered for extra freshness.
- Feta cheese – Because everything is better with feta!
- Greek salad dressing – Use your favorite store-bought or homemade dressing.

How to Make It:
- Cook the pasta according to the package directions. Drain and let cool slightly.
- Chop the veggies while the pasta cools—dice the pepper, quarter the cucumber, and halve the tomatoes.
- Combine everything in a large bowl: pasta, arugula, tomatoes, red pepper, cucumber, olives, and feta.
- Drizzle with dressing and toss well to coat.
- Enjoy immediately or refrigerate for a chilled, flavorful salad later! (Note: If I’m meal prepping I’ll leave the arugula out and just add it whenever I eat it.)
