Copycat Zupas Green Goddess Salad Recipe (Fresh & Easy)

I tried the Zupas Green Goddess Salad the other day and absolutely loved it! It felt fresh, filling, and somehow still light all at the same time. Now it’s one of those meals I crave when I want something packed with greens and protein but still actually satisfying. After making it at home a few times, I think this version gets pretty darn close. I love that I can load it up with extra toppings and use ingredients I already have at home.
The real star here is the Green Goddess dressing. It’s creamy, herby, bright, and makes the whole salad taste so fresh. I’ve been keeping a jar of it in the fridge and using it on everything from salads to wraps to veggie bowls throughout the week.
Copycat Zupas Green Goddess Salad
Green Goddess Dressing
Ingredients
- 1 cup whole milk Greek yogurt
- 1 cup fresh parsley
- 1 cup mixed soft leafy herbs (I like dill, mint, and basil)
- 2 tablespoons chopped chives
- 2 tablespoons fresh lemon juice
- ½ teaspoon lemon zest
- 1 tablespoon olive oil
- 2 teaspoons capers
- 1 garlic clove
- ÂĽ teaspoon sea salt
- Fresh cracked black pepper
Directions
Add everything to a blender or food processor and blend until smooth and creamy. Taste and adjust salt, pepper, or lemon juice if needed. Store in the fridge for up to 5 days.
For the Salad
You’ll need:
- Spring mix or baby butter lettuce
- Cooked rice
- Grilled chicken
- Shelled edamame (I buy it frozen from Smiths)
- Sugar snap peas
- Sliced cucumber
- Freshly grated Parmesan cheese
- Avocado
- Green Goddess dressing
Layer everything into a bowl and drizzle generously with the dressing. That’s it!
A Few Notes
- Zupas uses baby butter lettuce, but I usually just grab spring mix because it’s easy and I almost always have it on hand.
- This is such a good meal prep lunch because the dressing keeps well in the fridge and everything can be prepped ahead of time.
- I love adding warm rice because it makes the salad feel more filling and balanced.
- Freshly grated Parmesan makes a huge difference here.
- I like to store my salads in containers like these for for easy access on the go.
This salad has quickly become one of my favorite “feel good” meals. Fresh, flavorful, packed with texture, and easy enough for a weekday lunch or dinner.
