Looking for a quick and healthy salad recipe? This fresh arugula salad combines crisp cucumbers, juicy tomatoes, creamy feta cheese, and crunchy sunflower seeds, all topped with a fresh squeeze of lemon.

It’s become one of my favorite go-to meals when I’m looking for a quick and light breakfast or for lunch when I don’t want to just eat my kids leftover chicken nuggets…

I usually don’t measure anything, just toss in however much of each ingredient that sounds good but I’ll do my best to give you some guidance. This serving size would just be for one but I’m sure you could make this for a crowd.

Easy Arugula Salad

A fresh, quick arugula salad with crisp cucumber, juicy tomatoes, creamy feta, and crunchy sunflower seeds, finished with a squeeze of lemon — perfect for a light breakfast or lunch.

Ingredients
  

  • 2-3 cups fresh arugula
  • 1/2 cucumber diced
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup sunflower seeds
  • Salt pepper, and oregano to taste
  • Juice of 1/2 to 1 lemon

Method
 

  1. Wash the arugula.
  2. Peel and dice the cucumber.
  3. Wash and cut the tomatoes.
  4. Combine the arugula, cucumber, tomatoes, feta, and sunflower seeds in a bowl.
  5. Squeeze the lemon over the salad and toss gently.
  6. Sprinkle with oregano, salt, and pepper to taste.
  7. Eat immediately and enjoy!

Tips:

The best part is you can make this however sounds best to you. I’ve used a variety of seeds before, like pumpkin or almond and it was delicious. I’ve also added chicken for some extra protein.
